Do you like chocolate? Did you know that raw cocao is on the the world’s best sources of anti-oxidants. If you have never tried raw cocoa this is a good place to start.
If you are looking for a nutritionally dense snack that is easy to make and incredibly delicious then look no further. These energy balls are made with soaked pecans, raw cocao nibs, raw pumpkin seeds, ground flaxseed, dates and shredded coconut.
This means they are loaded with nutrients. Vitamins, minerals, protein, antioxidants, healthy essential fats, and natural sugar. All in a little yummy ball.
They are not low in calories but because they are so nutritionally dense one ball is all you need. So no need to worry about the caloric content because you won’t be snacking mindlessly on these like a lot of typical snacks which are full of empty calories.
Making this mixture only takes a few minutes. You can choose to mold the mixture into balls or bars, whichever you prefer.
The last energy bars I posted also had cocoa in them but I decided to add even more cocoa to these ones for a stronger chocolate flavour.

Making health energy balls/bars is so easy and they taste so good.
Cocao Pecan Pumpkin Seed Energy Balls
2 cups pecans, soaked for 4 hours or overnight
1/2 cup pumpkin seeds
3/4 cup raw cocao nibs
4 pitted medjool dates
optional: unsweetened shredded coconut for coating
Drain the pecans and dry a little bit so they aren’t too wet.
Combine the pecans, pumpkin seeds and cocoa nibs in a food processor and process until well ground. Add the dates and process more until everything is ground up and mixed together.
The mix should be sticky enough to hold together. If not add another date.
Form the mixture into balls and then roll them in coconut.
Keep in the fridge until ready to eat.
Makes about 10 balls.
