Sweet roasted goodness. Crispy on the outside, soft on the inside. These are so easy and so good. They can be made for breakfast, lunch, dinner or anytime you are hungry and want a snack.
This is a great reason to always have some sweet potatoes on hand. I feel like this is the type of thing that everyone likes but not many people actually make.
So this is a reminder to everyone how easy the are to make and how yummy they are to eat.
Cut the sweet potatoes into wedges, pop them in the oven, flip once and boom.
A healthy and delicious snack or addition to any meal.
Roasted Sweet Potato Wedges
2 medium sweet potatoes
Fine grain sea salt
Preheat oven to 425F.
Cut the sweet potatoes into wedges. Try to keep the pieces the same size as much as possible.
Cover a baking sheet with parchment paper. Brush the parchment paper with a little bit of coconut oil. Lay the pieces out on the parchment paper. Sprinkle with a little sea salt.
Bake for approximately 30 minutes or until cooked. Flip the wedges over half way through.
