I came across this recipe randomly on the internet. I was not looking for a recipe. I was just browsing around and the next thing I knew I was staring at a delicious recipe for chocolate raspberry hemp squares. They sounded rich and divine.
Coincidently, I had some raspberries in my fridge as well as all the other pantry ingredients. Coconut oil, agave syrup, hemp seeds, raw cacao powder are all ingredients anyone with a whole foods kitchen should keep on hand at all times.
If you are new to natural foods and used to eating more processed foods, these are some essential ingredients you should go out and get. I use coconut oil for most of my cooking. Since it is a saturated fat it stands up to high temperatures better than unsaturated oils which really shouldn’t be used for cooking at high temperatures.
The actual recipe for the squares can be found here. What is cool about this recipe is that you can also eat this recipe as a mousse. Simply skip the refrigeration step and serve straight out of the blender. Rich and creamy.
This gave me some ideas for some other recipes that I will be trying soon.
Note that I reduced the amount of agave and coconut oil by half of what was given in the original recipe. This is entirely up to you. I didn’t want the squares to be really sweet. If you like things sweet simply use a whole cup of agave. If you are new to raw cacao, using the entire amount of agave might not be a bad idea since it is quite bitter to start. Maybe next time I will try the recipe with the original amount of coconut oil to see what the difference in texture is, especially if I plan on using it as a mousse.
Raspberry, Cacao, Hemp Squares
Recipe adapted from Douglas McNish’s recipe on blisstree.com
1 cup Raw Shelled Hemp Seeds (Hemp Hearts)
1 cup raspberries
1 cup raw cacao powder
1/2 cup agave nectar (raw if possible)
1/4 cup coconut oil, melted
3 tbsp cool water
Combine the water, 3/4 of the raspberries, coconut oil, and agave nectar in a high powered blender and blend until smooth.
Add in the cacao powder and hemp seeds. Blend until smooth.
Place mixture into a brownie pan and spread it out evenly with a spatula.
Refrigerate for a few hours until the mixture is firm. Top with remaining raspberries and cut into squares to serve.
