Everybody likes a little dessert now and then.  Even those of us who eat healthy foods on a regular basis enjoy a sweet treat, and that’s okay.  Not all desserts are equal.  This chocolate coconut chia seed pudding is for those days when you are craving something sweet and delicious, but still want to eat something nutritious.

Not only is this dessert low in fat and sugar, it is nutritious.  You are doing yourself a favour by eating this pudding.  Chia seeds are a great source of essential Omega 3s that most of us need more of in our diet.  They are also high in antioxidants, and a good source of protein.  On top of all the nutrition that chia seeds offer, this recipe also contains raw cacao powder considered to be another great superfood because of its high content of antioxidants.  It is considered to be be one of the best sources of antioxidants  in the world.

If you are still not convinced, maybe the fact that this is one of the easiest desserts to make will encourage you to give it a try.  All it requires is mixing 5 ingredients in a bowl and letting it sit for a while.

Sounds too good to be true doesn’t it?  A dessert that is healthy, delicious and easy to make.  Well, believe it.  What are you waiting for?!

Go make some pudding.

This is just one example of a chia pudding.  There are endless possibilities of pudding flavours.  Chia seeds are tasteless which means the pudding will take on the flavour of whatever ingredients you choose to add.  You can even make chia pudding for breakfast.

Chia seeds slow down the rate at which you digest carbohydrates, providing you with energy over a longer period of time.  This is why long distance runners, like the Tarahumara Tribe in Mexico, eat chia seeds to sustain them on their long runs.  They consume it as a beverage called chia iskiate which is made of chia seeds, water, lemon and agave.

Chocolate Coconut Chia Pudding

Note: This makes one portion.  Recipe can easily be doubled, tripled etc. 

1 tablespoon chia seeds
1/2 cup almond milk
1 tablespoon raw cacao powder
2 tablespoons unsweetened shredded coconut
1 tablespoon agave syrup or maple syrup

In a bowl, combine the chia seeds with the almond milk and cacao powder. Whisk well. Place in the fridge for 1-3 hours. The longer you leave it the more it will set. You can even eat it after 30 minutes if you are in a hurry to eat it.

When you are ready to eat the pudding, add the coconut and agave. Mix well.
