This is the second time I have made this soup. The first time was when my friend Rosanna suggested that we make dinner make for her roommates and neighbours. She wanted to get to know some of the neighbours( in her building) better, and thought inviting them over for dinner would be fun. I agreed. Rosanna, loves to support me in everything I do, so I thought it would be a good opportunity to share my food with others. Well, at least that’s what she told me. I think she was happy to have someone take charge of cooking dinner for 8 people in her apartment kitchen. I was up for the task, because that is just the type of thing I love to do.

This soup was something I came up with for that evening. I had the inspiration a few days earlier, and thought it would be a good time to give it a try. It turned out really well, and everybody seemed to really enjoy the food. I admit that I am always a little nervous when cooing for complete strangers. Not knowing their personal tastes can make it difficult to know if they are going to like what you are making. Especially these days with all the different “diets” people follow, and various dietary restrictions, whether it be vegan, vegetarian, paleo, gluten-free, dairy free etc.
To make this soup I roasted the cauliflower and the sweet potato first to add that delicious roasted flavour. I love roasted cauliflower. It makes a great snack any night of the week. Absolutely delicious on its own.
The rest of the flavour for this soup comes form the lemongrass, ginger, coconut milk. I also added ground cumin and coriander. Fresh cilantro is a great addition at the end when you serve it.

Roasted Cauliflower, Sweet Potato & Coconut Milk Soup
450g cauliflower, cut into florets (1 medium head)
250g sweet potato, cut in chunks (1 medium sweet potato)
1 tbsp coconut oil
1 medium onion, chopped
1 lemon grass stalk, outer leaves and bottom removed, finely chopped
2 cloves garlic, finely chopped
chunk of ginger, 1/2 size your thumb, finely chopped
1 tsp ground cumin
1 tsp ground coriander
4 cups water
1 can coconut milk
salt and pepper to taste
Preheat the oven to 450F.
Lay the cauliflower florets and sweet potato out on a baking sheet. Roast for 25-30 mins until they have some colour.
About 10 minutes before the veggies are finished roasting heat the oil in a large soup pot on medium heat. Add the onions, garlic, lemon grass, ginger. Sauté for 5 minutes stirring often, making sure they don’t stick or burn.
Next, add the cumin, coriander, and a pinch of salt and pepper. Mix well, and cook for another couple minutes.
Now add the roasted cauliflower, sweet potato and the 4 cups of water. Cover, bring to a boil, and reduce heat to medium low. Cook for 35- 40 minutes.
Remove from heat and blend with a immersion blender, making sure everything is well blended.
Return to heat and add coconut milk. Simmer for another 10 minutes.
Remove from heat. Let the soup cool a little bit before tasting and adjusting seasoning. Add more salt and pepper if necessary.
Serve in bowls garnished with chopped cilantro.
