Smoky Black Bean Dip

Everytime I make this black bean dip for people I have people asking me for the recipe.  Until now, the recipe has lived in my head. So for all of you that asked me for this black bean dip recipe, here it is. Finally.

For those of you that have never tried it, I suggest you give it a try. It is pretty well received by everybody.  I think it has to do with the smoky spicy chipotle flavor. At least I think that’s why I like it so much.

Spinach Hummus

Happy St-Patrick's day. Here is a classic recipe for you to try turned green. Everything is better green, not only on St-Patrick's day. Well that's usually how I feel anyways.

Hummus. I don't think I know anyone who doesn't love hummus. Except maybe my friend who grew up with a health food nut dad who forced him to eat tahini on toast as a child.  I think he was slighlty traumatised by this experience and avoids anything with tahini in it at all costs. 

No matter what your daily diet consists of chances are you like hummus.  If you have never tried it., what are you waiting for? If you don't like hummus I don't think your eating the right kind.

Black Eyed Pea Mango Avocado Salsa

This salsa is loaded with nutrition and deliciousness. Black-Eyed peas, mango, avocado, tomatoes, spinach, cilantro, lime, onion. This is serious. This salsa means nutriotional business.  

 

Do not take this salsa lightly. This isn't old el paso salsa you buy in a jar. This is real salsa meaning made from un-processed fresh ingredients. Get it straight. 

 

Next time you have some guests over for dinner why not make a little effort and present them with this salsa. They will be happy you did.

 

Tastes amazing and is amazing for you. Hard to argue with that.

 

Black Eyed Pea Mango Avocado Salsa

 

1/2 cup cooked black eyed peas, roughly chopped

1 mango, diced

1/3 cup red onion, finely chopped

3 roma tomatoes (italian), diced

1 avocado, diced

1 cup chopped spinach

2 tablespoons chopped cilantro

juice of 1 lime (adjust to taste)

1/4 tsp cayenne

salt & pepper to taste

 

Combine all the ingredients together in a large bowl and mix together with a spoon.

 

Serve with Organic Low/No Salt Tortilla Chips, your favorite whole-grain crackers or even better, some raw veggie for those who want/chose to avoid processed grains.

Navy Beans and Arugula-Walnut Pesto on Toast

My original intention wasn’t to eat this on toast.  To tell you the truth I am not quite sure what my original intention was.  I had this idea on mixing some white beans with some pesto.  So I just did it.  I chose navy beans and decided on an arugula walnut pesto that I just made up.

I love roasted walnuts.  I will say it again. I love roasted walnuts.  If you don’t know what I am talking about go to the kitchen right now, turn on the oven to about 350 degrees Fahrenheit, lay some walnuts out on a baking tray, and roast in the pre-heated oven for approx 4-5 mins.  Do not take your eyes off the walnuts after they have been in for 2 minutes.  You will forget about them and they will burn.  It happens so quickly and so easily.  So just be patient and keep your eyes on them.  It won’t take long.  When they start to smell good and change colour they are ready.

you will want to eat these while they are still warm.  They taste so good. Great healthy snack.
