Easy Dessert: Sautéed Apples and Pecans

Print Friendly

easy apple pecan dessert

It’s that time of year again. As usual I can’t believe how quickly Christmas has come and I know I am not the only one who feels like this.

Being a lover of food of course I love this time of year because it means eating all types of delicious food until you simply can’t eat anymore. Yes sometimes we tend to overdo it but that’s ok. Not something I sully encourage but it always seems to happen. The most important thing is that we share time with friends and family and eat food with lots of love put into it. Continue reading

Ethiopian Spiced Cabbage Recipe

ethiopian spiced cabbage

Let me tell you how I came to make this Ethiopian Spiced Cabbage Recipe.

This dish was a result of my fridge being pretty much empty. I had some cabbage, a few carrots, and not much else. Sad, I know.  Maybe I am exaggerating a little but believe me, it was pretty bad.

However I did manage to take this sad state of my fridge and turn it into something delicious. At first, I lacked inspiration. Stuck. Couldn’t come up with much. There is always a way though…

Chocolate, mmmmmm! Everybody loves it, well, almost everybody. I certainly do.

Chocolate comes in many many different forms. Some good, some, not so much.

People love to grab a chocolatey snack in the afternoon. Some people grab a Kit kat, and some people, like myself, grab one of these chocolate almond energy balls.

This is a much healthier option of course, and a whole different type of delicious.

Coconut Cashew Apricot Energy Bar Recipe

IMG_1725

When I am hungry, really hungry, I need to eat ASAP. When we get to this point when we absolutely need to eat something, we tend to go for whatever is easiest and closest. This is often when we grab something less than ideal health wise just to satisfy our hunger.

A very common solution while at work is to head over to the vending machine around 3 pm for a little pick me up to get through the rest of the day. I know I used to do this when I worked in an office.

This energy bar recipe or others like it are a great way to avoid falling into that trap. When you are prepared for the hunger you can reach for something healthy that is still delicious! And I promise you that these coconut cashew apricot energy bars are just that.

It’s that time of year again. The time for hearty comforting food. A sweet root vegetable mash is just the thing.

It is a great alternative to mashed potatoes. Don’t get me wrong, I love me some mashed potatoes. Who doesn’t?

I also love this root vegetable mash. And I mean love. It just makes me feel good inside, especially on a cold fall or winter’s night. Continue reading

Vegetables for Breakfast? – Sautéed Breakfast Veggies

sautéed breakfast veggies

Vegetables for breakfast? Why not?!  Breakfast doesn’t have to be toast or cereal. It can be real food! Like a whole bunch of vegetables.

We have been conditioned to think that we must eat certain foods for breakfast. If it’s not toast or cereal, it’s probably bacon and eggs. It doesn’t have to be!

My go to quick breakfast, especially when I am short on time, is a green smoothie. Give this Kale, Peach and Mango Smoothie a try for yourself. Continue reading

Sweet Roasted Tomatoes with Spaghetti Squash

Roasted Spaghetti Squash and Roasted Tomatoes

This simple dish of sweet roasted tomatoes with spaghetti squash is a perfect marriage of summer and fall. It represents the transition of the seasons, the fresh tomatoes marking the end of summer. This is the same time of year when the farmer’s markets are flooded with a vast array of different kinds of squashes, marking the arrival of the cold weather.

The sweet tastes of summer joining together with the comforting taste of fall. Both sweet and even sweeter together, flavoured very simply with garlic, a little thyme, salt and pepper.

This dish is very easy to make, but roasting the tomatoes does take a couple of hours. This is the perfect time for reading a book, watching a movie, or going for a refreshing fall walk. Use the time to do something you really enjoy doing. Take a break! We don’t always need to be rushing around. Continue reading

Basic Guacamole Recipe and Tostones

tostones and guacamole

Guacamole seems to be one of the most popular appetizers around. Everybody loves a good guacamole, and it is so simple and quick to make, not to mention good for you. Everyone has different preferences when it comes to making guacamole. Some like it creamy, others chunky. Some people like lots of onion, and garlic, others not so much.

I tend to gravitate to a basic guacamole recipe most of the time. Avocado, lime, cilantro, salt and pepper with some diced tomato. More recently I have started adding a very little finely chopped shallot. Sometimes I will add a pinch of cayenne pepper to give it a little kick.

How do you like to make your guacamole?

Mango Peach Coconut Water Smoothie

peach mango coconut smoothie

I know what you are thinking? “Is this smoothie as delicious as it looks and sounds?” Well, the answer is yes. It’s lip smacking good. It’s a mango peach coconut water smoothie. Of course it’s amazing!

With only 3 ingredients, it is very simple. Sometimes we get carried away when making smoothies, throwing everything and the kitchen sink into the blender, hoping to get as much into our smoothie as possible. If you do this, you know exactly what I am talking about. It isn’t always the best approach.

When you have exerted a lot of energy, and sweat a ton, the first thing your body needs is to replenish its glucose stores, and electrolytes. What better way to do this than with a delicious fruit and coconut water smoothie! Try drinking a smoothie like this one as soon as possible after your next workout, then follow up with a well balanced meal about 45 minutes to an hour later. Continue reading
