Pineapple Blueberry Parsley Green Smoothie

As some of you know, I spent yesterday afternoon doing a smoothie demo at lululemon athletica Ste-Catherine here in Montreal.   I just wanted to say a big Thank You! to everyone who came out yesterday. You guys made it a huge success and in the process, I got to meet with some great people.  Thank you to everyone who tried the smoothies and asked questions, I loved your enthusiasm!

I hope that the smoothies I made yesterday inspired some people to start making some healthy smoothies on their own, or to try new ingredients in their smoothies.  People loved the green smoothie that I made which was awesome.  The Lemon-Ginger Zing was a hit! Blueberry Banana Muffins – Spelt Millet Banana Bread

2 recipes in this one post. 2 recipes back to back last night.  Here is how it happened…

My friend Erin walked in to my kitchen last night, which had 6 very ripe bananas out on the island, and right away said “are we making banana bread?”.

How can you say no to something like that? You can’t really. We were both really hungry and hadn’t eaten dinner. So we decided to take care of that problem first. Pulled my leftovers from the night before out of the fridge. Vegan adzuki bean sheppard’s pie and cabbage kidney bean coconut milk soup. Recipes for those coming soon.

With our hunger tamed, we could focus on the task at hand. Bananas and baking. I had recently bought some millet flour as well as some amaranth flour to experiment with. Both gluten free flours. This was the perfect chance to try them out. In what proportions? Who knows. We looked at a few other “healthy” banana bread recipes from various books and websites as a guide for proportions.

Blueberry Mango Collard Green Smoothie

Although it’s -17 degrees outside and feels like -27 with windshield factor I still crave delicious green smoothies.  Taste so good and are so good for you.

I know most of you are probably skipping out on your daily dose of green power so I thought I would put up an easy and delicious recipe for you guys to try.  For all of you asking me for green smoothie recipes here you go. Now you have no excuse but to try one.

If you are wondering why you should be eating raw collard greens:

” This food is low in Saturated Fat, and very low in Cholesterol. It is also a good source of Protein, Thiamin, Niacin and Potassium, and a very good source of Dietary Fiber, Vitamin A, Vitamin C, Vitamin E (Alpha Tocopherol), Vitamin K, Riboflavin, Vitamin B6, Folate, Calcium and Manganese.

Ingredients

Ingredients

1 ataulfo mango, peeled and pitted

1 cup frozen blueberries

1 banana

3 big collard leaves, stems removed (unless using vita-mix)

1 1/4 cup water  (add a bit more if you want a bit thinner consistency)

Yields 3 cups

Instructions

Combine all the ingredients in a blender and blend on high until consistency is smooth. Blending time will depend on how powerful your blender is.

Kale-Banana-Berry Smoothie

Very simple, very yummy green smoothie.

It wasn’t long ago that the idea of a green smoothie wasn’t very appetizing to me.  I say the idea wasn’t appetizing because I had never actually tasted one.

My love for green smoothies all started in July of this year.  My gf heard about a green smoothie workshop that was taking place at our Yoga studio. We planned on going but ended being out of town that weekend.  Instead she bought 2 books on green smoothies and borrowed a powered vita-mix blender.

One sip and I was hooked. Wow.  Never did I think that a bunch of green leaves blended up with some fruit could taste so good.   Not only do they taste amazing they are incredibly healthy for you and really easy to make.

Enough of the story for now…to be continued later…here is the recipe for a smoothie I just made this morning.  Give it a try.

Ingredients:

1 Banana

Approx.6 frozen strawberries

1/2 cup fresh or frozen blueberries

3 good sized kale leaves, washed and removed from stems

1 Tablespoon ground flaxseed

1 1/2 – 2 cups water

optional: 2-3 ice cubes

Yield: 3 Cups
