Black Bean, Yucca, Plantain Stew

Winter is still here, no one can deny that. Some people I know struggle with winter, while others I know love it. I am somewhere in between. There are days that I curse winter, and others where I am amazed by its beauty. Although I can’t deny the allure of warm weather all year round, there is much to be appreciated about winter.   One of them is making and eating heart warming stews like this black bean, yucca and plantain stew.

This particular stew creation came about because my girlfriend and I were obsessed with making a particular recipe over and over again, because it was so delicious, pretty easy to make, and always provided us with plenty of leftovers for lunch.

Coconut Cashew Apricot Energy Bar Recipe

When I am hungry, really hungry, I need to eat ASAP. When we get to this point when we absolutely need to eat something, we tend to go for whatever is easiest and closest. This is often when we grab something less than ideal health wise just to satisfy our hunger.

A very common solution while at work is to head over to the vending machine around 3 pm for a little pick me up to get through the rest of the day. I know I used to do this when I worked in an office.

This energy bar recipe or others like it are a great way to avoid falling into that trap. When you are prepared for the hunger you can reach for something healthy that is still delicious! And I promise you that these coconut cashew apricot energy bars are just that.

Coconut Cashew Chia Pudding with Strawberries

The original idea for this recipe came from Anna (a coworker) who asked if I was making a special smoothie for Canada day (July1). She had been disappointed when I had made nothing for our provincial holiday on June 24 (St. Jean Baptiste). I loved the idea and was excited to create something yummy that was red and white like the Canadian flag.

When Anna made the suggestion, I immediately thought of strawberries since they are in season. I liked the idea of making a dessert, a change from smoothies, not to mention it’s difficult to make a smoothie that is 2 colours. Thank you Anna for inspiring this dessert! I love it! The Best Gluten-Free, Paleo, & Vegan Chocolate Chip & Nut Cookies

These pecan, chocolate chip, coconut cookies are amazing! If you eat a paleo diet you will love these cookies! If you are vegan you will love these cookies! If you eat a gluten-free diet you will love these cookies!

If you just really, really like cookies, YOU WILL LOVE THESE COOKIES! Bottom line is these cookies make me happy! And yes, they are paleo, vegan, and gluten-free. More importantly they are chocolate, pecan and coconut cookies! How good does that sound?

Well the good news is, they taste as good as they sound. I love having a cookie or two as an afternoon treat, and I don’t feel badly doing so when I know the ingredients are so good.

Homemade Granola; Chocolate, Almond, Coconut Granola Recipe

After having some delicious homemade granola this past weekend at my aunt and uncle’s in Toronto I was inspired to make some granola of my own. I have only made granola once before and it turned out quite well. The first time was this summer and I made an almond and hemp seed granola with currants in it.

My idea for granola this time around was chocolate coconut. I decided to do a little google search just to see if anyone else had made a chocolate coconut granola before. The first one I found was a raw cacao and coconut granola by Kelly Childs. Unfortunately I didn’t have all the ingredients to make a raw granola not to mention a dehydrator. Something that is on my list of kitchen wants.

The second recipe I checked out was the type of granola I had in mind and was very similar to the recipe I had made up in my head. It is from a blog called Sugar and Charm. The blog itself is quite amazing. The design, the photos, and the videos. Very professional and quite beautiful. Roasted Cauliflower, Sweet Potato & Coconut Milk Soup

This is the second time I have made this soup.  The first time was when my friend Rosanna suggested that we make dinner make for her roommates and neighbours.  She wanted to get to know some of the  neighbours( in her building) better, and thought inviting them over for dinner would be fun. I agreed.  Rosanna, loves to support me in everything I do, so I thought it would be a good opportunity to share my food with others.  Well, at least that’s what she told me.  I think she was happy to have someone  take charge of cooking dinner for 8 people in her apartment kitchen.  I was up for the task, because that is just the type of thing I love to do.

Check out this video of Rosanna and Jon performing their song “Hold Me Down”.  I really love this song.  I am warning you.  It is catchy and will very likely get stuck in your head if you listen to it a few times over.  Enjoy.

Coconut Banana Vegan French Toast with Hemp Seeds

French toast. A breakfast classic. Something a lot of us grew up eating as kids and loving. Weekends at my house growing up often meant either french toast or pancakes. There are many different twists on french toast. This is the first time I have made vegan french toast. It is a coconut banana vegan french toast.

Although I had never made it or tried it, I imagined vegan french toast made with silken tofu. It didn’t interest me that much. Then I came across the idea of making french toast with bananas and coconut milk blended together instead of eggs and milk whisked together. Genius. I wish I had come up with the idea myself.

Vegan Strawberry, Banana, Coconut, & Spelt Pancakes

Based on the picture above you are probably asking yourself “where are the strawberries and bananas?” They are blended into the pancakes. The batter was made by blending strawberries and bananas with almond milk. A smoothie of sorts mixed with dry ingredients and made into delicious pancake batter. Strawberry banana pancakes. Yummy. Also coconut pancakes, and spelt pancakes. All together in one pancake. This pancake is loaded with nutritious as well as tasty ingredients. Not your standard pancake recipe.

Chocolate Coconut Chia Pudding Recipe & Video

Everybody likes a little dessert now and then.  Even those of us who eat healthy foods on a regular basis enjoy a sweet treat, and that’s okay.  Not all desserts are equal.  This chocolate coconut chia seed pudding is for those days when you are craving something sweet and delicious, but still want to eat something nutritious.

Not only is this dessert low in fat and sugar, it is nutritious.  You are doing yourself a favour by eating this pudding.  Chia seeds are a great source of essential Omega 3s that most of us need more of in our diet.  They are also high in antioxidants, and a good source of protein.  On top of all the nutrition that chia seeds offer, this recipe also contains raw cacao powder considered to be another great superfood because of its high content of antioxidants.  It is considered to be be one of the best sources of antioxidants  in the world.

Cacao Bliss and Almond Butter Panini with Coconut Ice Cream Recipe

 Cacao bliss is a relatively new discovery for me. I wrote about how I happy I was to discover it here while I was in NYC.

One of the things I wrote about was how it would be a good substitute for Nutella for those looking for a healthier substitute. When I returned home from NYC I happened to open a cookbook called Bold Italian. I decided to sit on the couch and browse through it for a few minutes.

I cam across a Nutella panini recipe topped with ice cream. It looked delicious so I thought why not make a vegan version with my new discovery. Cacao Bliss.

The brand of coconut ice cream I used is coconut bliss. There are tons of flavours available. The original coconut flavour works best in this recipe of course. If you are wondering what is sprinkled on the ice cream in the picture it is a pinch of ground espresso beans. This is what they did in the recipe I was inspired by and is completely optional.

This is a serious treat. It is incredibly rich. Give it a try if you are someone who has a sweet tooth and is looking for healthier alternatives.

Cacao Bliss & Almond Butter Panini with Coconut Ice Cream

Ingredients

2 slices of bread of choice (thin slices are better)
Cacao Bliss
Almond Butter
A little bit of melted coconut oil
1-2 small scoops of coconut ice cream (Coconut Bliss)

Instructions

Heat a panini or sandwich grill. If you don’t have one simply heat a non-stick frying pan to medium.

Spread some cacao bliss and almond butter onto a piece of bread. The exact amount is up to you and will depend on the size of your pieces of bread.

Cover with the other piece of bread. Brush the outside of both slices of bread with coconut oil.

Grill in the press for a 5 minutes until both sides are golden. If you are using a frying pan simply give each side a couple minutes pressing the panini down with the back of a spatula.

Cut it half and serve on a plate topped with a little scoop of coconut ice cream.
