Easy Dessert: Sautéed Apples and Pecans

easy apple pecan dessert

It’s that time of year again. As usual I can’t believe how quickly Christmas has come and I know I am not the only one who feels like this.

Being a lover of food of course I love this time of year because it means eating all types of delicious food until you simply can’t eat anymore. Yes sometimes we tend to overdo it but that’s ok. Not something I sully encourage but it always seems to happen. The most important thing is that we share time with friends and family and eat food with lots of love put into it. Continue reading

The Best Basic Roast Potato Recipe

the best roast potatoes

Sunday nights during the winter meant one thing when I was growing up, and that was roast dinners. Gathering around a fire before dinner and then around the table “en famille” to enjoy a serious feast. Without fail, roast potatoes were part of these memorable Sunday nights.

I am not sure exactly when it happened, but at some point, while I was still pretty young, the potatoes changed. Changed for the better that is. What happened?

My dad had picked up the trick from Lucy Waverman ( in the Globe and Mail) about how to make these roast potatoes.

In my mind, this trick is the key to the best basic roast potato recipe. I say basic, because in the recipe I present to you, there is no added flavour, such as garlic or rosemary, but you could easily make that happen.

So what’s the trick you ask?

Vegetable Stock Recipe

vegetable stock recipe

I hope everyone enjoyed Thanksgiving weekend here in Canada.  Hopefully you ate some good food and spent time with people you love. Part of Thanksgiving is eating delicious seasonal food, which for me, means lots of soup at this time of year.

How do you improve any homemade soup you make and save money? Make homemade vegetable broth. The vegetable stock recipe here is a simple stock you can make to use in a wide variety of soups, stews, or any other dish that calls for stock.

The taste of homemade vegetable stock is far superior to the majority of store bought stocks or bouillon cubes. Feel free to make this vegetable stock recipe your own by adding other herbs or vegetables.

Grain Free Vegan Pancakes

The Smoothie Challenge is well under way and I am personally loving all the new smoothies I am experimenting with. Today I had a chocolate mint green tea smoothie that blew my mind. Although I have been drinking a lot of smoothies to support all the physical activity I have been doing, a man’s gotta eat. And this man, loves to eat! As much as I love smoothies.

With much of my time going towards creating the 30 day smoothie challenge and all the exciting upcoming guest posts I haven’t had much time to create and share many delicious plant-based recipes therefore I thought I would take a few minutes today to share a recipe I have been making regularly for the past little while. It has become my go to pancake recipe.

I personally love pancakes. I love maple syrup too! Don’t you? You will be glad to know that these pancakes are healthier than your typical pancake. And if you want to make them even healthier you may want to skip on the syrup and consider using things like, unsweetened jam, nut butters and coconut butter.

The first few times I was experimenting with making pancakes with chickpea flour I was mixing it with other flours like quinoa, and amaranth. Trying out different combination over and over again. Then I decided why not just try chickpea flour. My friend Leanne over at Healthful Pursuit had success with it so why not. If you want to make these pancakes a little sweeter you can add a 1/4 cup of coconut sugar to the dry ingredients. However if you ware suing maple syrup they will be plenty sweet as is. I came across this recipe  randomly on the internet.   I was not looking for a recipe.  I was just browsing around and the next thing I knew I was staring at a delicious recipe for chocolate raspberry hemp squares.  They sounded rich and divine.

Spinach Hummus

Happy St-Patrick's day. Here is a classic recipe for you to try turned green. Everything is better green, not only on St-Patrick's day. Well that's usually how I feel anyways.

Hummus. I don't think I know anyone who doesn't love hummus. Except maybe my friend who grew up with a health food nut dad who forced him to eat tahini on toast as a child.  I think he was slighlty traumatised by this experience and avoids anything with tahini in it at all costs.

No matter what your daily diet consists of chances are you like hummus.  If you have never tried it., what are you waiting for? If you don't like hummus I don't think your eating the right kind.

Vegan Gluten-Free Buckwheat Pancakes

Gluten-Free

Is there a day that goes by that you don’t hear those words. Everybody is eating gluten-free.  It seems as those gluten is the new devil.  I hear people asking me, “but isn’t gluten bad?”.  People avoid gluten the way they feared carbohydrates during the atkins craze.

People still fear carbs for that matter.  “Can’t eat that whole-wheat bread or those wholesome potatoes, they are carbs.  They will make me fat.”  Sure, sure, but that chocolate bar, brownie and candy your eating is ok.

Quinoa Tabouleh

Quinoa Tabouleh

A Middle-Eastern classic with a South American twist.  In the Middle East tabouleh is normally made with bulgur.  Nothing wrong with bulgur but I thought I would change it up and use quinoa.  Everyone is talking about quinoa but not everyone knows what to do with it.  Also, making tabouleh with quinoa makes it gluten-free for those of you who don’t tolerate gluten well.

Delicious, very healthy and extremely simple to make. What more can I say…
