Vegetables for breakfast? Why not?!  Breakfast doesn’t have to be toast or cereal. It can be real food! Like a whole bunch of vegetables.

We have been conditioned to think that we must eat certain foods for breakfast. If it’s not toast or cereal, it’s probably bacon and eggs. It doesn’t have to be!

Mint, Parsley, Arugula & Fruit Green Smoothie

Since the new year I have been making a conscious effort to experiment more with my smoothies. This goes for my green smoothies as well as my non green smoothies. I have been doing my best to keep track of them all. Working on tweaking the recipes and making them the best they can be, sharing my favourites here on Health is Happiness. What does this mean? It means I will be sharing quite a few smoothie recipes here on the blog in the weeks and months to come. I will be sure to keep posting delicious non-smoothie recipes as well. Hopefully I can inspire a few more people to give heathy smoothies a try. Quite a few people have been telling me recently that they tried making a green smoothie for the first time and loved it. This makes me very happy.

I am enjoying experimenting with all these new smoothies, finding out what I like and what I don’t. The reason I committed myself to doing this is that I was into the routine of making the same smoothies most of the time. Don’t get me wrong, I love the smoothies I was making and am not going to stop making them. My go to greens are still kale, swiss chard, and spinach, as well as collard greens, when I can find them. The fruit I use most are strawberries and bananas. I am going to try and switch it up and mix different greens with different fruit.

Garlicky Sautéed Kale with Hemp Seeds

Kale. A nutritional powerhouse that too many of us don’t eat at all or don’t eat enough of. When is the last time you bought kale? I will be honest. Before I started consuming green smoothies I don’t know that I had ever bought kale. It isn’t something that most of us grew up eating, so we don’t think of buying it, and we aren’t sure how to prepare it, or what dishes it complements?

Now that green smoothies are part of my (almost) daily routine I consume kale quite regularly. Kale is one of the greens I use most for making green smoothies, but it is great in a wide variety of dishes. Kale is great in salads, stews, soups, or simply sautéed with some garlic. Zephyr Farm – Co-op La Maison Verte – Radish Top & Lemon Smoothie

What do you usually do with the green leaves attached to the radishes you buy?   You probably throw them out, but did you know they are loaded with nutrition? They can be used in smoothies or even salads.

So save those radish tops!  We throw out the greens from a lot of the vegetables we buy and this is a huge mistake. Those green leaves are extremely valuable sources of nutrients. The greens from vegetables are actually higher in many nutrients than the vegetables themselves, and lower in sugar. So next time you see some carrots, beets, radishes, or even turnips with the green leaves still attached, be sure to pick some up and use the greens.  Just be sure  to rince them thorougly, or try to buy organic if you can.

Kale-Banana-Berry Smoothie

Very simple, very yummy green smoothie.

It wasn’t long ago that the idea of a green smoothie wasn’t very appetizing to me.  I say the idea wasn’t appetizing because I had never actually tasted one.

My love for green smoothies all started in July of this year.  My gf heard about a green smoothie workshop that was taking place at our Yoga studio. We planned on going but ended being out of town that weekend.  Instead she bought 2 books on green smoothies and borrowed a powered vita-mix blender.

One sip and I was hooked. Wow.  Never did I think that a bunch of green leaves blended up with some fruit could taste so good.   Not only do they taste amazing they are incredibly healthy for you and really easy to make.

Enough of the story for now…to be continued later…here is the recipe for a smoothie I just made this morning.  Give it a try.

Ingredients:

1 Banana

Approx.6 frozen strawberries

1/2 cup fresh or frozen blueberries

3 good sized kale leaves, washed and removed from stems

1 Tablespoon ground flaxseed

1 1/2 – 2 cups water

optional: 2-3 ice cubes

Yield: 3 Cups
