Jalapeño & Lime Sweet Potato Brussels Sprouts Hash

Brussels Sprouts. Good old brussels sprouts. Disliked by many, and loved as well. You either love them or hate them. I am convinced a lot more people would/could love them if they had them prepared differently. I love brussels sprouts even if they are just steamed or boiled, but ye,s they do have a strong flavour.

For those who do not share my love of brussels sprouts, a dish like this jalapeño, lime, sweet potato, brussels sprouts hash might just help change their mind. Combining them with roasted sweet potatoes definitely might help convert more of you. The sweet deliciousness of roasted sweet potatoes is hard not to love. A little love served up in the form of lime, jalapeño and cilantro. Boo ya! Now we are talking! You know you want some. It’s ok to admit it. I won’t tell anyone.

Papaya Mint Lime Arugula Green Smoothie

Papaya isn’t something that I have eaten much of in my life. The last time I bought papaya, it wasn’t good, which I think turned me off. What made me decide to give it a try again? About 2 weeks ago I tried a smoothie at the Yoga studio with papaya in it, and it was delicious.

The next time I was at the market, I picked up a papaya, and decided to give it another chance. I made sure to let it ripen completely, which I think might have been the problem the last time I tried papaya. Not quite ripe. Yuck.

Once the papaya was ripe, I cut it open and removed the interesting looking seeds inside and scooped out all the flesh. Pretty good actually, and even better in a green smoothie.

Fresh Corn & Black Bean Salad Recipe

There is nothing quite like fresh corn on the cob eaten the same day it was picked.  The sweet delicious flavour screams summer.  It reminds me of summers as a kid.  I would always get so excited for corn on the cob.  Corn on the cob and peaches!  The truth is I still get just as excited, if not more.

Another thing I love about the end of summer is all the hot peppers on display at the market. They are absolutely beautiful.  So many different kinds and so many different colours.  Cayenne, chilli, habanero, jalapeño, cherry bomb just to name a few.  How much heat can you handle?

Black Eyed Pea Mango Avocado Salsa

 

 

This salsa is loaded with nutrition and deliciousness. Black-Eyed peas, mango, avocado, tomatoes, spinach, cilantro, lime, onion. This is serious. This salsa means nutriotional business.  

 

Do not take this salsa lightly. This isn't old el paso salsa you buy in a jar. This is real salsa meaning made from un-processed fresh ingredients. Get it straight. 

 

Next time you have some guests over for dinner why not make a little effort and present them with this salsa. They will be happy you did.

 

Tastes amazing and is amazing for you. Hard to argue with that.

 

Black Eyed Pea Mango Avocado Salsa

 

1/2 cup cooked black eyed peas, roughly chopped

1 mango, diced

1/3 cup red onion, finely chopped

3 roma tomatoes (italian), diced

1 avocado, diced

1 cup chopped spinach

2 tablespoons chopped cilantro

juice of 1 lime (adjust to taste)

1/4 tsp cayenne

salt & pepper to taste

 

Combine all the ingredients together in a large bowl and mix together with a spoon.

 

Serve with Organic Low/No Salt Tortilla Chips, your favorite whole-grain crackers or even better, some raw veggie for those who want/chose to avoid processed grains.
