I’m back! Back from my 2 week vacation (1 week in England and 1 week in Italy) I ate some amazing food, some of it healthy, and some not so. I will share some photos form my trip in an upcoming post.

Eating cherries from the tree growing on the property where we were staying was absolutely incredible. Hands down the best cherries I have ever had. Waking up every morning and picking a lemon right off one of the three lemon trees right outside the kitchen for my lemon water was something I am going to miss dearly. Now I need to think about paying 1$ for 3 lemons at the market here.

I am glad to be back home and excited to get back to creating new and delicious recipes in my kitchen, ( the reason I started Health is Happiness in the first place.)

Roasted Tomatillo Salsa Recipe

This was my first time buying tomatillos.  It was actually my first time seeing them at the market but maybe, I had never really looked.

Tomatillos are like little green tomatoes. They come covered in a papery husk. Just peel of the husk and you have a little green tomato ready to be made into some delicious salsa.

Green spicy salsa was my mission and thats what I got.  I  bought a variety of hot peppers at the market so I had a few different ones to choose from for this salsa. You can change the type of hot pepper you use depending on what is available to you and how hot you want it.

Roasted Tomatillo Salsa

14 tomatillos (approximately), husks removed
1 fresh green cayenne pepper (or another type of fresh hot pepper)
1/2 cup cilantro
1/4 cup chopped white onion
1 garlic clove
1 tbsp lime juice
1/4 tsp sea salt

Preheat the oven to 425F.

Place the tomatillos in a baking dish and roast for about 15 mins.

Remove from oven and leave to cool for 10-15 mins.

In a food processor, combine the tomatillos with the rest of the ingredients and process until smooth.

Serve with organic corn tortillas. If you can find baked tortillas I recommend trying them.  I prefer unsalted or lightly salted tortillas.

Pepper, Onion, Artichoke, Arugula Pizza on the BBQ

Summer is typically a time to spend lots of time outdoors and gather with friends on patios while barbecuing some delicious food.  Unfortunately the most common food found on people’s barbecues tend to be hot dogs, hamburgers, sausages, chicken and steaks.

I will admit that I have enjoyed my fair share of meat off the barbecue, but since changing my diet I have discovered more ways to use the barbecue in the summer.  My friend Justin told me about some barbecued flatbread, good for making pizza, which sounded delicious.  Continue reading

WheatBerry, Yellow Bean, Zucchini and Pesto Salad Recipe

With the heat of the summer currently at its peak there is nothing better than yummy salads made with fresh, local, and seasonal ingredients to keep us cool.

The culprits here are yellow beans, zucchini and basil.  I happened to pick the basil for the pesto right from my balcony.  I have 8 basil plants.  One thing I have learnt about basil is that I can never have enough.  Love it!  Making pesto takes quite a bit of fresh basil so now is the time to do it.  If you aren’t growing your own you can buy a huge amount at the market for a reasonable price.   Something you could only dream of in winter months. Mint, Blood Orange, Orange and Lemon Juice

I had never tried a blood orange before this. Can I say wow? First of all, the color is absoutely beautiful and secondly the flavor is incredible.

Smoky Black Bean Dip

Everytime I make this black bean dip for people I have people asking me for the recipe.  Until now, the recipe has lived in my head. So for all of you that asked me for this black bean dip recipe, here it is. Finally.

For those of you that have never tried it, I suggest you give it a try. It is pretty well received by everybody.  I think it has to do with the smoky spicy chipotle flavor. At least I think that’s why I like it so much.
