The truth is I am way behind on posting this recipe for baked stuffed squash. I first created the recipe around thanksgiving time while experimenting with festive holiday meals. If I recall this is what we ate at Thanksgiving. We loved it!

I wasn’t able to take pictures when I made it the first time, but made it again before Christmas and am now getting around to sharing it with you. A little late for the holidays, but I promise it will be just as delicious.

Let me tell you how I came to make this Ethiopian Spiced Cabbage Recipe.

This dish was a result of my fridge being pretty much empty. I had some cabbage, a few carrots, and not much else. Sad, I know.  Maybe I am exaggerating a little but believe me, it was pretty bad.

The Best Basic Roast Potato Recipe

Sunday nights during the winter meant one thing when I was growing up, and that was roast dinners. Gathering around a fire before dinner and then around the table “en famille” to enjoy a serious feast. Without fail, roast potatoes were part of these memorable Sunday nights.

I am not sure exactly when it happened, but at some point, while I was still pretty young, the potatoes changed. Changed for the better that is. What happened?

My dad had picked up the trick from Lucy Waverman ( in the Globe and Mail) about how to make these roast potatoes.

In my mind, this trick is the key to the best basic roast potato recipe. I say basic, because in the recipe I present to you, there is no added flavour, such as garlic or rosemary, but you could easily make that happen.

Immune Boosting Garlic Soup

Cold and flu season. Ugh. Many of us fall victim to it at some point or another. I have had a cold for the past week now, and it is the first time I have been sick since last November. I used to get sick several times a year, so this is quite an improvement.

I happened to come across this garlic soup recipe last week. I was not looking for a particular recipe to boost my immune system, but the timing couldn’t have been better. I found the recipe in Annemarie Colbin’s book Food and Healing. Food and Healing is probably my all time favourite book that I have read on nutrition. If you are interested in learning more about nutrition, this book is really interesting and informative.

Cornmeal Porridge with Dried Fruits

As the weather cools down, we start to crave different foods, more warming, comforting foods. As far as breakfast goes for me this means porridge. Although I still eat porridge in the summer, not nearly as regularly as during the colder months. On cold days, I tend to start my day with something warm like this cornmeal porridge instead of my daily smoothie, which is my usual summer routine. I have my smoothie later on in the day during the colder months. Post hot yoga for example.

Like many people, oats are my go to grain when it comes to making porridge. It’s what my grandmother used to make me when I would visit her. I would love waking up to watch cartoons and sit in front of the TV with my bowl of porridge. I would load it with raisins and cover it with milk and white sugar. Needless to say the oatmeal I make for myself today is a little different.

Broccoli, Leek and Potato Soup with Roasted Fennel

Although the past few days have been very kind to us here in Montreal as far as weather goes, we can’t deny that fall is upon us. And what does that mean? It means time for making soups! Delicious soul warming soups like this broccoli, leek and potato soup.

Fall’s seasonal ingredients lend very well to a wide variety of soups. Leeks, broccoli and potatoes are just a few of fall’s delicious offerings. Butternut squashes, pumpkins, tomatoes, peppers, a wide variety of greens, beets, carrots, apples etc.

I took a trip to the market (Jean-Talon) on Friday. Needless to say I was in food heaven. So much incredible produce, it was a little overwhelming. I am not exaggerating when I say that I can’t fit anything else in my fridge right now. Eggplants, beans, beets, leeks, peppers, romanescu, onions celery root, red garlic and more.  It’s hard to say no when the produce is so fresh. The only “problem”is that it comes in massive quantities. I bought a bushel of butternut squash for 8$! Continue reading

Vegetarian Bean Chili

Chili is one of those dishes that has the ability to please meat eaters and vegetarians alike. Meat eaters often seem to be happy eating vegetarian chili if it is a good one. It is also a great warming winter meal, and although we are getting closer to spring we are still in the dead of winter. As I look outside at the moment the snow is coming down. Chili sounds great.

This vegetarian bean chili is a seriously hearty chili. I mean serious. Black beans, red kidney beans, chickpeas and lentils. It’s got it all. I also used sun dried tomatoes and parsnips which you don’t usually see in chili. The reason I thought of adding sun dried tomatoes was because I was using tomato passata and not diced tomatoes since I didn’t have any on hand.

I highly recommend grinding your own spices if you can. This ensures you are getting the most flavour out of your spices. When spices are ground they start to lose flavour. So imagine the difference in flavour between spices you just ground and the pre ground spices that have been in your spice drawer/cupboard for who knows how long. You see my point? It really does make a difference. You can grind your own spices with a mortar and pestle or with a spice grinder. There is something very satisfying about the process of grinding spices with a mortar and pestle. Continue reading

Roasted Cauliflower, Sweet Potato & Coconut Milk Soup

This is the second time I have made this soup.  The first time was when my friend Rosanna suggested that we make dinner make for her roommates and neighbours.  She wanted to get to know some of the  neighbours( in her building) better, and thought inviting them over for dinner would be fun. I agreed.  Rosanna, loves to support me in everything I do, so I thought it would be a good opportunity to share my food with others.  Well, at least that’s what she told me.  I think she was happy to have someone  take charge of cooking dinner for 8 people in her apartment kitchen.  I was up for the task, because that is just the type of thing I love to do.

Check out this video of Rosanna and Jon performing their song “Hold Me Down”.  I really love this song.  I am warning you.  It is catchy and will very likely get stuck in your head if you listen to it a few times over.  Enjoy.
