Gluten Free Zucchini Bread


Who doesn’t love a loaf of fresh, sweet zucchini bread straight out of the oven. What’s even better is one that is free of highly refined flours and sweeteners. This vegan and gluten free zucchini bread turned out to be amazing! I would be lying if I said I was 100% confident with how it would turn out.

I don’t do too much baking, because I like to make stuff up as I go, and just go with the flow. This style doesn’t usually lend itself too well to baking. Once in a while, I decide to give it a go, and see what happens.

My friend Justin brought my gf and I a huge zucchini from his wine tasting trip in Ontario. When I say huge, I mean huge! Zucchini this big are also known as marrow. The skin was hard like a squash, and the seeds were big like a squash. Since we had so much zucchini to use up, it only seemed fitting we make some zucchini bread.

WheatBerry, Yellow Bean, Zucchini and Pesto Salad Recipe

With the heat of the summer currently at its peak there is nothing better than yummy salads made with fresh, local, and seasonal ingredients to keep us cool.

The culprits here are yellow beans, zucchini and basil.  I happened to pick the basil for the pesto right from my balcony.  I have 8 basil plants.  One thing I have learnt about basil is that I can never have enough.  Love it!  Making pesto takes quite a bit of fresh basil so now is the time to do it.  If you aren’t growing your own you can buy a huge amount at the market for a reasonable price.   Something you could only dream of in winter months. Kale, White Beans, & Tomato

Kale and white beans. Hearty and filling. This an incredibly tasty, nutritious and simple meal.  It is a very simple dish to prepare.  You can’t go wrong with onions, garlic, good quality tomatoes. Guaranteed to make the kitchen smell good and usually makes for a tasty dish.

Adding kale to a dish like this one is a great way to add more greens to your diet.  My twist on a simple yet classic italian meal. All types of greens can be added to different dishes without changing the flavour of a dish too much but adding lots of nutrients.

Kale, swiss chard, spinach and collard greens are my favourite greens to add to dishes like this. Try adding any of these greens to different chilis, stews, salads, curries and more.

Greens aren’t just for salads and smoothies. Next time you go food shopping be sure to load up on greens that you don’t normally buy and give them a try.

Kale, White Beans, & Tomato

1 onion, finely chopped
2 cloves garlic, finely chopped
2 medium carrots, diced
4 cups tomato pasatta
1 bunch kale, stems removed, roughly chopped
1 can white kidney beans (cannellini beans), drained and rinsed
1 medium zucchini, cut in chunks
1 small sprig of fresh rosemary, leaves finely chopped
olive oil
pinch of cayenne pepper
salt and pepper to taste

1. Sauté onions, carrots and garlic in olive oil. Season with salt and pepper.

2. Add tomato passata, rosemary and cayenne pepper. Simmer for 20 mins.

3. Add the kale, zuchinni, and white beans. Cook for 25 minutes.

This dish goes nicely with some creamy polenta.
